Updated Grilled Chicken Kebabs


Last night we had grilled chicken kebabs again. It went over about as well this time as it did last time with the boys. I was happy to get to be able to use the first zucchini from our garden.


4:00 - clean and chop the meat and vegetables, this takes about 15 minutes


4:15 - take all the cut vegetables and chicken and place them on grilling skewers, then sprinkle with salt and pepper, this takes about 20 minutes


5:00 - heat up the grill and place the loaded skewers directly on the grill grate, cook until the meat and vegetables are browned on one side, then turn them over and cook on the other side, about 20 minutes depending on how hot the grill is

5:30 - take all the food off of the skewers, so it is easier to serve



Grilled Chicken Kebabs

- 2 chicken breasts
- 8 oz box of mushrooms, halved or quartered
- onion, any color, cut into eighths and peeled apart
- green and yellow peppers, cut in 1-1 1/2" cubes
- 8 oz box of cherry or grape tomatoes
- zucchini or summer squash, sliced
- salt and pepper to taste

Heat up your grill or grill pan while preparing skewers. Cut chicken and veggies into 1-1 1/2" pieces and load onto skewers. Salt and pepper all meat and veggies. Cook skewers until the meat is cooked through.


We choose to slide all of the meat and veggies off of the skewers onto a serving tray and just serve it to our family from there. Another way to do this is to have each family member build their own skewers with the meat and vegetables that they enjoy so that they are personalized. That makes it an easy way to get the kids involved in helping to make dinner too. When they are a little bit older I will have my boys help with this, but right now they would just pick the chicken and maybe tomatoes. So until they make more vegetable choices Mom or Dad will fix up the skewers. We do include something the boys enjoy as well and in this case, it was the bread on the side.
