Tuscan Tortellini Soup - Delish


Soup is a favorite of Hubby and mine in the winter, and we make it at least once a week. This is not something that makes the Bear happy, he moans every time we say it's soup night. He will be much happier come spring and summer when we trade soup night for grill night.

We were excited to try this one and were supposed to do it together on our date night. The weekend had brought other things and we ended up not cooking together on Saturday night, then Hubby offered to cook himself on Sunday night. I will gladly take a night off of cooking when I can, so then he elected to make our soup. I offered to help, but he said not to worry about it. He made the soup and I ended up playing Mario Kart with the boys.

The soup was hearty and filling. It tasted fine with the tomato, some onion, red pepper flakes, and a bit of garlic. I was surprised that there were no herbs or spices in it for flavor. We like all the ingredients that were included we just wanted more flavor. Some traditional Italian seasonings would have been preferable to us. We also considered making our own tortellini instead of using some from the store. Another time we might go that route to add some flavor and make it more time consuming for working together.

Leftovers: There was less broth and the noodles were a little bit mushy, but otherwise it was still pretty good.

Me: It was pretty good, but needed a little more flavor.
Hubby: Hubby thought it was a little boring and needed a bit of a kick.
Big Man: He thought it was great and had a second bowl.
Bear: Bear tolerated this soup, but wasn't a fan of the filled pasta.
Mr. T: He ate it, but took a long time, so it wasn't a favorite.

Will I repeat: Possibly.

What will I change: I would add some oregano or Italian seasoning for a little more flavor.
