Fish Packets


One quick and simple dinner that I like to make is what we call Fish Packets. It has actually been quite a while since I last made this one for us. Sometimes Hubby doesn't think there are enough calories for him in this dish. I have not yet found a side dish that I particularly like to go with this one though. I welcome your side dish suggestions. Potatoes have been declined, being too heavy, Jasmine rice is usually a favorite in our house, but that flavor would not be quite right with this dish. We also would not want a pasta with a heavy sauce to overpower the fish and vegetables. Maybe a simple salad would work.

Anyway, we really enjoy this dish for a nice light summer dinner, but it works in the winter too. Just use your favorite white fish, and slice your favorite vegetables thinly and that is about all that it takes. Put everything in a piece of parchment paper and wrap it all up with a little liquid to help it steam in the oven. I also added some fresh herbs from our garden on the top before I baked it. Hubby and I were so happy with how this came out we both said that we need to make it more regularly again. None of the boys were thrilled with this dinner option, but it was eaten.

To make this for a big group and have it be a little more dressy, you can even make individual packets for each person you are serving. Just use smaller pieces of parchment paper and place one piece of fish and one serving of vegetable in each piece of parchment, then serve each person their own packet. It does save paper if it is all cooked together so that is how I choose to serve the family.

Fish Packets

-tilapia filets (or any other white fish you like)
-4-5 cups vegetables of choice, thinly sliced,
     I used:
     -carrots
     -cabbage
     -multi-colored salad peppers
-herbs to sprinkle on top
    I used:
    -green onion, sliced
    -rosemary, peeled off the stem
-salt
-pepper
-liquid to pour over everything
    I used:
    -orange juice

Heat the oven to 425 degrees.

Place large piece of parchment paper on a cookie sheet or jelly roll pan with half of it hanging over the top so that it can be folded back over again.

Place fish in a single layer on the bottom of the parchment, season with salt and pepper.

Evenly spread all the vegetables over the fish and sprinkle the vegetables with salt and pepper, then sprinkle the herbs on top.

Gently pour about a quarter cup of your chosen liquid over everything.


Now fold the extra parchment over the top of everything. Starting at the corner fold the top and bottom parts of the parchment paper together.


Continue working your way around the parchment paper, rolling the top and bottom edges together as you go.


Go all the way around until there is no opening left in the parchment paper and tuck the very end underneath or inside the packet.


Now bake it in the oven for 15-20 minutes, or until the fish and vegetables are nicely steamed. Then serve it and enjoy!
