Roasted Vegetables


One of our favorite side dishes is roasted vegetables. It's fast, it's easy, it's healthy, and it tastes great. We use many different types of vegetables in this same way. Our favorite vegetables to prepare this way are broccoli, asparagus, and cauliflower.

Roasted Vegetables

-1 lb. broccoli, or other vegetable of choice
-olive oil
-salt
-pepper

Heat the broiler of the oven. Cut vegetables into bite-sized pieces and spread them out of a jelly roll sheet pan. Drizzle olive oil over the broccoli, then sprinkle salt and pepper on top. Shake the pan a little bit to spread the olive oil, salt, and pepper over all the vegetables. Put the pan under the broiler for about 5 minutes, then pull it out and give the pan a shake with the vegetables to get a new side exposed to the heat. Place the pan back under the broiler for a couple more minutes until there is some browning on the vegetables. Enjoy!
