Grilled Chicken Kebabs


Two nights ago for dinner, we had our grilled chicken kebabs. This was such a treat since Hubby and I hadn't made these since last summer. Over the Memorial Day weekend, temperatures were in the upper 90's in central Iowa, so we did a lot of grilling at our house to avoid turning on the oven. We have also been trying to eat on the cheap this week because I was almost out of food budget money for this month at this point. So I was using up fresh veggies that we had on hand with a couple pieces of chicken.

I did purchase a loaf of Italian bread at Hy-Vee since they were on sale for $1.00 and sliced up a loaf to serve with the meat and vegetables. After slicing up all the components, I just slid them onto skewers and sprinkled salt and pepper on them and they were ready to go. The fresh vegetables with the flavor from the charcoal grill just tasted like the start of summer. It was fresh a light for a hot day and just hit the spot. Hubby and I really enjoyed our dinner. The boys were not thrilled because they did not like seeing all the vegetables just sitting in front of them without sauce, or a casserole, or something else hiding all that healthy freshness. We offered them barbeque sauce for dipping, and eventually, they got their way through their dinner.

I will put a recipe out here based on what I cooked two night ago, but this works well with any meat and vegetables you have on hand. Slices of zucchini, summer squash, or eggplant would work really well here. As far as meat goes, you could use beef or pork instead of chicken.

Grilled Chicken Kebabs

- 2 chicken breasts
- 8 oz box of mushrooms, halved or quartered
- onion, any color, cut into eighths and peeled apart
- green and yellow peppers, cut in 1-1 1/2" cubes
- 8 oz box of cherry or grape tomatoes
- salt and pepper to taste

Heat up your grill or grill pan while preparing skewers. Cut chicken and veggies into 1-1 1/2" pieces and load onto skewers. Salt and pepper all meat and veggies. Cook skewers until the meat is cooked through.


We choose to slide all of the meat and veggies off of the skewers onto a serving tray and just serve it to our family from there. Another way to do this is to have each family member build their own skewers with the meat and vegetables that they enjoy so that they are personalized. That makes it an easy way to get the kids involved in helping to make dinner too. When they are a little bit older I will have my boys help with this, but right now they would just pick the chicken and maybe tomatoes. So until they make more vegetable choices Mom or Dad will fix up the skewers. We do include something the boys enjoy as well and in this case, it was the bread on the side.

This is a quick and easy, fresh and light summer meal and could be on your menu soon.
